The unusual cuisine of Kerala brings to the fore the culinary expertise of the people of Kerala. Producing some of the tastiest foods on earth, the people of Kerala are gourmets with a difference. The cuisine is very hot and spicy and offers several gastronomic opportunities. The food is generally fresh, aromatic and flavoured. Keralites are mostly fish-and-rice eating people.

The land and the food are rich with coconut, though one can't imagine Kerala food without chilies, curry leaf, mustard seed, tamarind and asafoetida.

Just a pinchful of tamarind can substitute tomatoes, but there is no real substitute for curry leaf. Since time immemorial, coconut has been an integral part of the cuisine of Kerala.



Beef Stew

Ingredients:-

Beef(small pieces) - 1/2 kg
potato - 1 cup
carrot - 1 cup
green peas - 1 cup
ginger -one small piece
onion -1 large
garlic -6 pods
green chillies -6
curryleaves
oil - tsp
chilli powder -1 tsp
turmeric powder -1/2 tsp
ground pepper -1/2 tsp
ginger garlic paste -2 tsp
coconut milk -4 cups
vinegar -2 tbsp
salt

spices to grind:-

cinnammon
cardamom
nutmeg
pepper
fennelcloves

Method:-

Cut stew meat and wash thoroughly
Drain excess water.
Add 1 tsp chilli powder,1 tsp salt,1/2 tsp turmeric powder,1/2 tsp pepper powder,ground spices,ginger garlic paste and pressure cook the meat till 10 whistlesor till it is done
Cut potatoes and carrots to very small pieces.
Steam the potatoes,carrots and peas with salt.
Extract coconut milk.Keep the first extract aside.
Make 2 more extractions.
In a pan,heat oil,saute curryleaves,green chillies,garlic,ginger,onion.
Add 1 tspcoriander powder.
Add the cooked veg.s and fry for a minute.
Add this to the meat,and add the coconut milk(2nd and third extractions),1 cup of water and bring to a boil.
Add the first extracted milk now
When the sides start boiling,add 2 tbsp vinegar.
Do not let it boil.
Serve hot with Palappam
